Granite is (almost) non-porous

Because granite countertops are almost completely non-porous, they don’t stain easily. Bakers know that spills are part of the process. Sometimes accidentally, other times deliberately. A good granite countertop will allow you to roll out bread or mix up a sticky batter with impunity.

Any mess you make can be wiped up easily enough with a wet cloth. No stains, no sticking, no headache required.

Note: this feature is also a favorite amongst people with Mediterranean tastes. Your red wine spilled? Your sauce splattered up out of the pan? With granite countertops, it’s no big deal.

Granite is heat-resistant

Granite can withstand extremely hot temperatures with complete impunity. This means that you can take hot pans directly out of the oven and set them on your countertop without risking damage. Where linoleum will melt or warp, granite will remain unblemished.

Why? There are two reasons. The first is that granite can withstand temperatures of up to 1600 degrees without warping or melting. The other factor: it is highly resistant to thermal shock. Thermal shock occurs when a material rapidly changes temperatures. For example, if you rinse out your hot coffee pot with cold water, you may find that the carafe cracks. That is thermal shock.

Fortunately, it isn’t something you will need to worry about with granite. The only risk you face placing a hot pan on your countertop is to yourself. There is always the risk that you might touch the newly heated granite surface and burn your fingers.

Otherwise, the heat-resistant properties are almost absolute. In fact, granite is so heat resistant that it could theoretically be used as a cooking surface—though your cast-iron skillet is probably the more practical option.

Granite retains its temperature

Granite retains its temperature longer than other countertop materials. Why does this matter? Let’s say you are mixing biscuit dough. Or a pie crust. Bakers know that these recipes require a lot of butter. They also know that the more you work with cold butter, the warmer it becomes. The softer it becomes.
If the temperature gets too high, the dough will be unusable—at least until it logs some time in the refrigerator.

Granite countertops will remain cool for a longer period of time, making it a little easier to work with sensitive ingredients.

Granite is (basically) indestructible

Last, but certainly not least, granite is also virtually indestructible. Kitchens are hot, sharp places. Granite is more than up to the task of holding its own against them. Theoretically, you can cut fruit or veggies directly on your granite countertop without damaging it.

Most people don’t recommend it—primarily because you will wear down your knife edge. But the option is there if you find yourself hastily throwing something together while your favorite cutting board is halfway through a rinse cycle.

Kitchens are made to be used, but that use does wear down the materials eventually. That’s why it is important to buy good stuff. Granite is for more than just bakers.
